Behind each beaming smile is a story of rising above challenges and exceeding the potential to achieve academic success, independence and pride. From hopelessness to self-determination, 82 high school graduates from Santa Ana received well-deserved recognition at the 4th Annual Nicholas Academic Centers' Graduation Celebration held at the Westin South Coast Plaza in Costa Mesa.

On Saturday, June 9, 2012, over 400 people gathered at the Westin South Coast Plaza in Costa Mesa to celebrate the accomplishments of the NAC’s 81 graduating seniors from the 2012 class. Friends, family, high school counselors & administrators, community leaders, and more shared an evening of great music, delicious food, and inspiring stories and speeches.

12 years after retiring from the bench, Judge Jack K. Mandel donned the robe once more. Unlike the robe he wore during his 19 years as a Superior Court Judge, however, this robe was of the graduating kind.

In the last lecture of the Chapman Visiting Scholars Series for the school year, Dr. Jennifer Waldeck stressed the importance of being able to communicate willingly and effectively with the Nicholas Academic Centers’ students. Dr. Waldeck, Associate Professor of Communication Studies at Chapman University, used the concepts from her co-authored book, Business and Professional Communication in a Digital Age to examine the role communication plays in people’s everyday lives.

On the Road Again: The Jamie Oliver Big Rig Hits the Road to Teach Healthy Nutrition

While all good things must come to an end, in this case the classes offered on the Big Rig, a mobile cooking and nutrition school funded by the Jamie Oliver Food Foundation and The California Endowment, it’s comforting to know that the healthy Food Revolution has made a positive impact in the lives of Santa Ana students and other community members.

The revolution continues. The “Food Revolution,” that is. Nicholas Academic Centers’ students continue the march to conquer bad eating habits, learn nutritional cooking tips, and adapt a healthier lifestyle, all thanks to the classes taught aboard Jamie Oliver’s Big Rig, a mobile cooking and nutrition school funded by the Jamie Oliver Food Foundation and The California Endowment.

Hope College Visits the Nicholas Academic Centers

Hope College, located in Holland, Michigan, and one of 40 colleges included in Loren Pope’s Colleges That Change Lives (CTCL), recently visited the Nicholas Academic Centers to inform students about the Hope College environment and answer questions about Hope’s many programs. According to the CTCL website, “Hope ranks in the top 5% among private, 4-year colleges in terms of alumni earning a Ph.D.”

The Nicholas Academic Centers Climb Aboard Jamie Oliver's Food Revolution Big Rig

Students of the Nicholas Academic Centers are taking part in a “food revolution.” A dozen NAC students are participating in a five-week course aboard the “Big Rig,” a mobile cooking and nutrition school funded by the Jamie Oliver Food Foundation and The California Endowment.

Grainy ice cream still tastes good, as the Nicholas Academic Centers students found out at the most recent Visiting Scholars Series. Chapman University professor, Dr. Prakash, spoke on the science of how we taste food.
